The sushi roll was born as a result of the increasing popularity of Japanese sushi abroad. The sushi roll, for example the California Roll, uses avocado, crabsticks and cucumber as toppings instead of sashimi, with nori rolled inside it. The sushi roll won the approval of Americans, who were familiar with neither raw seafood nor nori, in the ’80s. Today, the US-conceived sushi roll has been re-imported to Japan and is enjoyed at casual places such as izakaya. The sushi roll continues to evolve, with more and more types becoming available every day. Each sushi bar and restaurant puts their own twist on their sushi rolls to make them even more original and creative. You will surely find your favorite sushi rolls in Okinawa.

 


 

Okinawa’s number-one sushi bar

Sushi bar Yoshihachi, opened by chef Yoshio Maekawa 19 years ago, is the pioneer of sushi rolls in Okinawa. Maekawa started making original, innovative sushi rolls in the ’80s, when he was working in the States. More than 30 varieties of sushi rolls include Love Rolls, with the sweet aroma of brandy, and Soft-shell Crab Rolls. In addition to sushi, a range of food items is available on the menu. The restaurant is the most popular sushi bar in Okinawa among Americans, and it opens at 4:30 p.m. for US military customers who leave the office around that time. The place is packed with foreign clientele every day.

Yoshihachi’s owner, ”samurai” sushi master Yoshio Maekawa, demonstrating the Yanagiba kitchen knife. The majority of his time in the States was spent in California. Living by his motto, ”The art of cuisine should evolve as time passes,” he continues to create new sushi rolls.

A modern sushi restaurant in Mihama
